A great money saving lunch at under 20p per portion!

Makes approximately 30 3 = 1 portion

1 large or 2 standard tins of chickpeas
2oz red lentils
1 large onion
1 large carrot (very finely grated)
Handful of fresh coriander (finely chopped) or use dried coriander
1/2 tsp chilli powder
2 tsp of garamasala (can be replaced with Morocan spice)
2/3 cloves fresh garlic or 2 tsp garlic granules

Method

Cook lentils in a little water until they are cooked and resemble a very thick paste. Leave to cool.
Either mash the chickpeas or use a food processor.
Fry the onions, garlic and spices.
Combine all the ingredients together in a bowl.
Divide into small balls and place on a greased baking tray.
Cook on 180C for 30-40 minutes until firm and lightly brown.

Serve with a fresh salad and a little light mayonnaise.
