A tasty carb free lunch!

Serves 2 – Approximately 150 calories per serving – Preparation time 10 minutes -Cooking time 35-40 mins

Half a red pepper
Half a yellow pepper
1 small onion
2 baby Aubergines
1 courgette
1 tablespoons Olive oil
Feta cheese
2 tsp Mixed herbs

Method

Chop the peppers, onion, aubergines and courgette in to fairly thin sticks. Place in a large bowl and drizzle with a little olive oil. Stir the veggies to ensure they are all covered in the oil. It is best to add the oil a little at a time until veggies are evenly covered to avoid adding more oil than necessary. Add mixed herbs and continue to stir until they are evenly distributed.

Spread out in a shallow dish and place in oven on 180C for about 20-25 minutes until they are just beginning to soften. Remove from oven and crumble feta cheese over the veggies. Return to oven for about 10 minutes until veggies are tender, but not burnt.
